Instructions
Preparation Steps
Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
Add chicken to the skillet and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
Add onion to the skillet and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more.
Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
Return chicken to the skillet. Reduce heat to low, cover, and simmer for 30 minutes, or until chicken is cooked through.
Stir in heavy cream and thyme. Simmer for another 5 minutes, or until sauce has thickened slightly.
Serve hot, garnished with fresh parsley (optional).
Notes
Serve with mashed potatoes or rice for a complete meal.
