Preparation Steps
Preheat oven to 350°F (175°C). Grease and flour a 10-inch tube pan.
In a large bowl, sift together the flour and sugar. Set aside.
In a separate bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the sugar, beating until stiff, glossy peaks form.
Gently fold the dry ingredients into the egg whites, being careful not to deflate the mixture. Stir in the vanilla extract.
Pour the batter into the prepared pan and bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
Invert the pan and let the cake cool completely before removing from the pan.
Notes
This cake is best served the day it is made. Store leftovers in an airtight container at room temperature.
