Apple Cinnamon Muffins

  • 2.5 cups All-purpose flour
  • 0.75 cup Granulated sugar
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 cup Milk
  • 0.5 cup Vegetable oil
  • 1 large Egg
  • 2 cups Diced apples
  • 0.25 cup Chopped walnuts (optional)

Preparation Steps

  • Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In a separate bowl, whisk together the milk, oil, and egg.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples and walnuts (if using).
  • Fill the muffin liners about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
