  • 8 oz Pasta (rotini or penne)
  • 2 ripe Avocados
  • 0.5 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 0.25 cup Fresh cilantro, chopped
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • In a large bowl, mash the avocados. Add lime juice, olive oil, salt, and pepper. Whisk to combine.
  • Add the cooked pasta, cherry tomatoes, red onion, and cilantro to the avocado mixture. Toss to combine.
  • Serve immediately or chill for later.

Notes

For a spicier kick, add a pinch of red pepper flakes. Feel free to add other vegetables like bell peppers or cucumbers.
