This Bacon Egg Hash Brown Casserole is a hearty and delicious breakfast dish perfect for feeding a crowd. It's loaded with crispy bacon, fluffy eggs, and golden brown hash browns, all baked together in a cheesy sauce.
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a large skillet, cook bacon until crispy. Drain on paper towels and crumble. Reserve 2 tablespoons of bacon grease.
In the prepared baking dish, layer hash browns, crumbled bacon, and half of the shredded cheddar cheese.
In a bowl, whisk together eggs, milk, salt, and pepper. Pour over the hash brown mixture.
Sprinkle remaining cheddar cheese over the top. Drizzle the reserved bacon grease over the cheese.
Bake for 45 minutes, or until golden brown and set.
Let stand for 10 minutes before serving.
