This Bacon Egg Hash Brown Casserole is a hearty and delicious breakfast dish perfect for feeding a crowd. It's loaded with crispy bacon, fluffy eggs, and golden brown hash browns, all baked together in a cheesy sauce.

  • 1 lb Bacon cut into 1-inch pieces
  • 1 cup Shredded Cheddar Cheese divided
  • 30 oz Frozen Hash Browns thawed
  • 6 large Eggs
  • 1 cup Milk
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Preparation Steps

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a large skillet, cook bacon until crispy. Drain on paper towels and crumble. Reserve 2 tablespoons of bacon grease.
  • In the prepared baking dish, layer hash browns, crumbled bacon, and half of the shredded cheddar cheese.
  • In a bowl, whisk together eggs, milk, salt, and pepper. Pour over the hash brown mixture.
  • Sprinkle remaining cheddar cheese over the top. Drizzle the reserved bacon grease over the cheese.
  • Bake for 45 minutes, or until golden brown and set.
  • Let stand for 10 minutes before serving.

Notes

For a spicier casserole, add a pinch of cayenne pepper to the egg mixture. You can also add other vegetables, such as chopped onions, bell peppers, or mushrooms.
