Baileys Cheesecake Bars

Decadent Baileys-infused cheesecake bars with a buttery graham cracker crust.

Ingredients
  

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.33 cup Granulated sugar
  • 0.5 cup Unsalted butter melted

Filling

  • 24 oz Cream cheese softened
  • 1 cup Granulated sugar
  • 0.5 cup Baileys Irish Cream
  • 2 Large eggs
  • 1 tsp Vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, leaving an overhang.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the prepared pan.
  • In a large bowl, beat cream cheese and sugar until smooth. Beat in Baileys, then eggs one at a time, followed by vanilla.
  • Pour filling over the crust. Bake for 30-35 minutes, or until the center is just set.
  • Let cool completely in the pan, then refrigerate for at least 2 hours before cutting into bars.

Notes

For a richer flavor, use high-quality Baileys Irish Cream.
