This Baked Burrito Casserole is a hearty and flavorful dish, perfect for a weeknight meal. Layers of seasoned ground beef, beans, rice, and cheese are baked to bubbly perfection. A crowd-pleaser that's easy to customize!
In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
Stir in taco seasoning and water. Simmer for 5 minutes.
Spread refried beans in the bottom of a 9x13 inch baking dish.
Layer cooked rice over the beans.
Top with the ground beef mixture and half of the cheese.
Bake for 20 minutes, or until cheese is melted and bubbly.
Remove from oven and top with remaining cheese. Bake for an additional 5-10 minutes, or until cheese is melted and lightly browned.
Let cool slightly before serving. Garnish with salsa and sour cream.
