Baked Burrito Casserole

This Baked Burrito Casserole is a hearty and flavorful dish, perfect for a weeknight meal. Layers of seasoned ground beef, beans, rice, and cheese are baked to bubbly perfection. A crowd-pleaser that's easy to customize!

  • 1 pound Ground beef
  • 1 package Taco seasoning
  • 1 cup Water
  • 2 cans Refried beans
  • 2 cups Cooked rice
  • 4 cups Shredded cheddar cheese
  • 0.5 cup Salsa
  • 0.5 cup Sour cream

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
  • Stir in taco seasoning and water. Simmer for 5 minutes.
  • Spread refried beans in the bottom of a 9x13 inch baking dish.
  • Layer cooked rice over the beans.
  • Top with the ground beef mixture and half of the cheese.
  • Bake for 20 minutes, or until cheese is melted and bubbly.
  • Remove from oven and top with remaining cheese. Bake for an additional 5-10 minutes, or until cheese is melted and lightly browned.
  • Let cool slightly before serving. Garnish with salsa and sour cream.

Notes

Serve with your favorite toppings like salsa, sour cream, guacamole, and chopped cilantro. For a spicier casserole, use a hot taco seasoning and add a can of diced green chilies.
