Balsamic Pasta Salad

This vibrant balsamic pasta salad is a delightful mix of perfectly cooked pasta, fresh vegetables, and a tangy balsamic dressing. A quick and easy dish, ideal for a light lunch or a side at your next gathering.

  • 8 oz Pasta (rotini or similar)
  • 0.5 cup Balsamic vinegar
  • 0.25 cup Olive oil
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Red onion, thinly sliced
  • 0.5 cup Fresh basil, chopped
  • 4 oz Feta cheese, crumbled
  • 0.25 cup Kalamata olives, pitted and halved
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Preparation Steps

  • Cook pasta according to package directions. Drain and rinse with cold water. Set aside.
  • In a large bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
  • Add pasta, cherry tomatoes, red onion, basil, feta cheese, and olives to the bowl. Toss gently to combine.
  • Serve immediately or chill for later. Enjoy!

Notes

Feel free to add grilled chicken or shrimp for a heartier meal. This salad is also great for meal prepping!
