These easy banana muffins are moist, delicious, and perfect for a quick breakfast or snack. They're made with simple ingredients and can be customized to your liking.

  • 1.5 cups All-purpose flour spooned and leveled
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 0.5 cup Granulated sugar
  • 0.25 cup Vegetable oil
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 1 cup Mashed ripe bananas about 3 medium bananas

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, baking soda, and salt.
  • In a separate bowl, combine the sugar, oil, egg, and vanilla extract. Stir in the mashed bananas.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  • Fill the muffin liners about 2/3 full.
  • Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes
