Banana Nut Muffins

Delicious and moist banana nut muffins, perfect for breakfast or a snack.

  • 1.75 cups All-purpose flour
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 0.75 cup Granulated sugar
  • 0.33 cup Vegetable oil
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 1 cup Mashed ripe bananas (about 3 medium)
  • 0.5 cup Chopped walnuts or pecans

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, baking soda, and salt.
  • In a separate bowl, combine the sugar, oil, eggs, and vanilla extract. Mix well.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Fold in the mashed bananas and nuts.
  • Fill the muffin liners about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Enjoy these muffins warm or at room temperature. Store in an airtight container.
