BBQ Pineapple Chicken Kabobs

These BBQ Pineapple Chicken Kabobs are the perfect summer grilling recipe! Marinated chicken and pineapple chunks are grilled to perfection and basted with a sweet and tangy BBQ sauce.

Ingredients
  

Main Ingredients

  • 1.5 pounds Boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tablespoon Olive oil
  • 0.5 cup BBQ sauce plus more for basting
  • 1 cup Pineapple chunks fresh or canned
  • 1 red bell pepper red bell pepper chopped
  • 1 green bell pepper green bell pepper chopped
  • 1 onion Yellow onion cut into chunks

Marinade

  • 0.25 cup BBQ sauce
  • 0.25 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 1 tablespoon Garlic powder
  • 1 teaspoon Ginger powder
  • 0.5 teaspoon Black pepper

Instructions
 

Preparation Steps

  • In a bowl, whisk together the marinade ingredients.
  • Add the chicken to the marinade and toss to coat. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  • Preheat grill to medium-high heat. Thread chicken, pineapple, bell peppers, and onion onto skewers.
  • Grill kabobs for 12-15 minutes, turning occasionally and basting with BBQ sauce during the last 5 minutes of grilling, or until chicken is cooked through.
  • Remove from grill and serve immediately.

Notes

Serve with a side of rice or your favorite BBQ sides.
