These BBQ Pineapple Chicken Kabobs are the perfect summer grilling recipe! Marinated chicken and pineapple chunks are grilled to perfection and basted with a sweet and tangy BBQ sauce.
1.5poundsBoneless, skinless chicken breastscut into 1-inch cubes
1tablespoonOlive oil
0.5cupBBQ sauceplus more for basting
1cupPineapple chunksfresh or canned
1red bell pepperred bell pepperchopped
1green bell peppergreen bell pepperchopped
1onionYellow onioncut into chunks
Marinade
0.25cupBBQ sauce
0.25cupSoy sauce
2tablespoonsBrown sugar
1tablespoonGarlic powder
1teaspoonGinger powder
0.5teaspoonBlack pepper
Instructions
Preparation Steps
In a bowl, whisk together the marinade ingredients.
Add the chicken to the marinade and toss to coat. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
Preheat grill to medium-high heat. Thread chicken, pineapple, bell peppers, and onion onto skewers.
Grill kabobs for 12-15 minutes, turning occasionally and basting with BBQ sauce during the last 5 minutes of grilling, or until chicken is cooked through.
Remove from grill and serve immediately.
