Beef Enchilada Casserole

A hearty and flavorful beef enchilada casserole, perfect for a weeknight dinner or a potluck. This recipe features tender beef, rich enchilada sauce, and melted cheese.

  • 1.5 lbs Ground Beef
  • 1 cup Chopped Onion
  • 1 tsp Chili Powder
  • 0.5 tsp Cumin
  • 15 oz Enchilada Sauce
  • 12 corn tortillas Corn Tortillas
  • 2 cups Shredded Cheddar Cheese

Preparation Steps

  • Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  • Add the onion, chili powder, and cumin to the skillet. Cook for 2-3 minutes, or until the onion is softened.
  • Stir in the enchilada sauce. Simmer for 5 minutes.
  • Fill each tortilla with a spoonful of the beef mixture. Roll up the tortillas and place them in a greased 9x13 inch baking dish.
  • Top with the shredded cheese.
  • Bake at 375 degrees F (190 degrees C) for 20-25 minutes, or until the cheese is melted and bubbly.
