Beef Enchilada Casserole

- 1.5 lbs Ground Beef
- 1 cup Chopped Onion
- 1 tsp Chili Powder
- 0.5 tsp Cumin
- 15 oz Enchilada Sauce
- 12 corn tortillas Corn Tortillas
- 2 cups Shredded Cheddar Cheese
Preparation Steps
Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
Add the onion, chili powder, and cumin to the skillet. Cook for 2-3 minutes, or until the onion is softened.
Stir in the enchilada sauce. Simmer for 5 minutes.
Fill each tortilla with a spoonful of the beef mixture. Roll up the tortillas and place them in a greased 9x13 inch baking dish.
Top with the shredded cheese.
Bake at 375 degrees F (190 degrees C) for 20-25 minutes, or until the cheese is melted and bubbly.
