Beef Lombardi Casserole

  • 1.5 lbs Ground Beef
  • 1 cup Chopped Onion
  • 2 cups Diced Carrots
  • 1 cup Diced Celery
  • 1 can Diced Tomatoes
  • 1 cup Beef Broth
  • 0.5 cup Tomato Paste
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Preparation Steps

  • Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
  • Add onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.
  • Stir in diced tomatoes, beef broth, tomato paste, oregano, salt, and pepper.
  • Pour mixture into a greased 9x13 inch baking dish.
  • Bake at 375°F (190°C) for 45 minutes, or until bubbly and heated through.
