This delicious bourbon chicken recipe is easy to make and perfect for a weeknight dinner. Tender chicken pieces are coated in a sweet and savory bourbon sauce, then slow-cooked to perfection.
In a slow cooker, combine bourbon, soy sauce, brown sugar, honey, ketchup, apple cider vinegar, garlic, ginger, and red pepper flakes (if using).
Add the chicken thighs to the slow cooker and stir to coat.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is cooked through and tender.
In a small bowl, whisk together the cornstarch and cold water to create a slurry.
Remove the chicken from the slow cooker and set aside.
Turn the slow cooker to high. Pour the cornstarch slurry into the slow cooker and stir to combine. Cook for 15-20 minutes, or until the sauce has thickened.
Return the chicken to the slow cooker and toss to coat in the thickened sauce.
Serve the bourbon chicken over rice, noodles, or your favorite side dishes.
