Preparation Steps
Preheat oven to 400°F (200°C). Cut potatoes into fries and toss with vegetable oil. Season with salt and pepper.
Bake fries for 20-25 minutes, or until golden and crispy.
While fries bake, prepare gravy according to package instructions.
Fry eggs to your liking.
Assemble poutine: Place fries on plates, top with cheese curds and hot gravy. Top with fried eggs and chopped chives.
