broccoli cheddar quiche

This crustless broccoli cheddar quiche is a light, low-carb dish perfect for breakfast or brunch. Packed with fresh broccoli and sharp cheddar cheese, it's easy to make and delicious to eat.

  • 3 cups chopped broccoli florets
  • 1 cup grated cheddar cheese
  • 0.67 cup 2% milk
  • 0.25 cup half & half cream
  • 5 large eggs
  • 0.75 teaspoon kosher salt
  • 0.125 teaspoon ground black pepper
  • pinch freshly grated nutmeg
  • spray cooking spray

Preparation Steps

  • Preheat your oven to 350 degrees Fahrenheit. Spray a pie dish with cooking spray to prevent sticking.
  • Steam the chopped broccoli florets in the microwave with 1 tablespoon of water until tender crisp and green but not mushy, about 2.5 to 3 minutes.
  • Evenly spread the steamed broccoli in the prepared pie dish and sprinkle the grated cheddar cheese over the broccoli.
  • Whisk together the milk, half & half cream, eggs, kosher salt, ground black pepper, and freshly grated nutmeg to make the custard mixture. Pour the custard evenly over the broccoli and cheese in the dish.
  • Bake the quiche for 35 to 40 minutes, or until the center is set and the top is lightly golden.
  • Let the quiche cool for a few minutes, then cut into 6 pieces and serve warm.

Notes

This quiche is delicious served warm for breakfast or brunch and can be prepared ahead of time for convenience. Perfect for low-carb and keto diets!
