Cabbage Roll Soup

A hearty soup featuring all the flavors of traditional cabbage rolls in a simple, comforting dish.

  • 1 pound ground beef Use lean if preferred
  • 1 cup onion chopped
  • 4 cups cabbage shredded
  • 2 cups beef broth
  • 2 cans diced tomatoes 14 oz each
  • 1 cup rice uncooked
  • 1 teaspoon salt
  • 1 teaspoon pepper

Preparation Steps

  • In a large pot, brown the ground beef over medium heat. Drain excess fat.
  • Add onions and cook until softened.
  • Stir in cabbage, beef broth, diced tomatoes, rice, salt, and pepper.
  • Bring to a boil, then reduce to simmer and cover for 30 minutes.
  • Check seasoning and adjust with salt and pepper if needed.

Notes

Feel free to add a splash of hot sauce for extra warmth.
