Preparation Steps
Cut the chicken breasts into bite-sized pieces and season with Cajun seasoning.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
Remove the chicken from the skillet and set aside. Add the diced onion and bell pepper to the skillet and cook until softened, about 3-5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Pour in the heavy cream and chicken broth. Bring to a simmer.
Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
Add the cooked chicken back to the skillet. Toss the cooked pasta in the sauce.
Garnish with fresh parsley and serve immediately.
