California Grilled Chicken Avocado and Mango Salad
Sweet champagne mango paired superbly with creamy Haas avocados and California grilled chicken for a sweet-savory salad that’s perfect for warm summer days and nights.
Whisk olive oil, white balsamic vinegar, salt, and fresh cracked pepper together to create the vinaigrette and set aside.
In a large bowl, toss diced avocado, diced mango, grilled chicken slices, and diced red onion together.
Fill a large salad platter with baby red butter lettuce or divide evenly onto four small salad plates.
Top the greens with the chicken, avocado, and mango mixture. Drizzle half of the vinaigrette over the top.
Serve immediately with the remaining vinaigrette on the side.
