Carrot Cake Cookies

Delicious and easy carrot cake cookies with cream cheese frosting! These soft cookies are packed with warm spices and shredded carrots, and topped with a creamy frosting. Perfect for a treat!

  • 1.75 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.5 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 0.25 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup shredded carrots
  • 0.5 cup cream cheese, softened
  • 2 cup powdered sugar
  • 0.25 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  • In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in egg and vanilla extract.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Stir in shredded carrots.
  • Drop by rounded tablespoons onto baking sheets.
  • Bake for 10-12 minutes, or until edges are golden.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • For the frosting, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  • Frost cookies and enjoy!

These cookies are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
