Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, whisk together flour, brown sugar, granulated sugar, baking soda, cinnamon, nutmeg, and salt.
Add carrots, cream cheese, oil, eggs, and vanilla extract. Mix until just combined.
Drop by rounded tablespoons onto prepared baking sheets.
Bake for 10-12 minutes, or until edges are golden brown.
Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
