Cauliflower Soup

This creamy cauliflower soup is a comforting and healthy meal, perfect for a chilly evening. It's easy to make and packed with flavor!

  • 1 large head cauliflower
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Cut the cauliflower into florets.
  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until cauliflower is tender.
  • Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
  • Stir in heavy cream, Parmesan cheese, salt, and pepper. Heat through, but do not boil.
  • Serve hot, garnished with additional Parmesan cheese if desired.

Notes

For a vegan version, substitute the heavy cream with full-fat coconut milk and omit the Parmesan cheese.
