Preparation Steps
Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press evenly into the prepared pan.
In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla.
Pour filling over crust. Bake for 30-35 minutes, or until center is almost set.
Let cool completely before cutting into bars. Refrigerate for at least 2 hours before serving.
Notes
For a richer flavor, use full-fat cream cheese. You can also add a layer of fruit topping before baking.
