This Cheesy Garlic Butter Corn is a quick and easy side dish that's bursting with flavor. Sweet corn kernels are tossed in a creamy, cheesy garlic butter sauce, making it the perfect accompaniment to any meal.

  • 6 cups fresh or frozen corn kernels
  • 0.5 cup butter unsalted
  • 2 cloves garlic minced
  • 4 oz cream cheese
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup fresh parsley chopped
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
  • Add the corn kernels to the skillet and cook for about 5-7 minutes, stirring occasionally, until heated through.
  • Stir in the cream cheese until melted and smooth. Then, stir in the cheddar cheese, parsley, salt, and pepper.
  • Cook for another 2-3 minutes, or until the cheese is melted and the sauce has thickened slightly. Serve immediately.

Notes

Feel free to add a pinch of red pepper flakes for a little heat. You can also use frozen corn; just make sure to thaw it before cooking.
