Instructions
Preparation Steps
In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
Add the corn kernels to the skillet and cook for about 5-7 minutes, stirring occasionally, until heated through.
Stir in the cream cheese until melted and smooth. Then, stir in the cheddar cheese, parsley, salt, and pepper.
Cook for another 2-3 minutes, or until the cheese is melted and the sauce has thickened slightly. Serve immediately.
Notes
Feel free to add a pinch of red pepper flakes for a little heat. You can also use frozen corn; just make sure to thaw it before cooking.
