These cheesy mashed potato cups are a delightful appetizer or side dish. Creamy mashed potatoes are baked to golden perfection and filled with a cheesy surprise. A crowd-pleaser!

Instructions
Preparation Steps
Boil potatoes in a large pot of salted water until tender, about 15-20 minutes.
Drain potatoes and return to the pot. Mash with butter, milk, salt, and pepper until smooth.
Preheat oven to 375°F (190°C). Grease a muffin tin.
Mix half of the cheddar cheese and Monterey Jack cheese into the mashed potatoes.
Spoon mashed potatoes into the muffin tin cups.
Top each cup with the remaining cheese and a dollop of sour cream.
Bake for 20-25 minutes, or until golden brown and bubbly.
Notes
