Cheesy Mashed Potato Cups

These cheesy mashed potato cups are a delightful appetizer or side dish. Creamy mashed potatoes are baked to golden perfection and filled with a cheesy surprise. A crowd-pleaser!

  • 3 pounds Russet potatoes, peeled and quartered
  • 0.5 cup Butter unsalted
  • 1 cup Milk warm
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Shredded Monterey Jack cheese
  • 0.25 cup Sour cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Preparation Steps

  • Boil potatoes in a large pot of salted water until tender, about 15-20 minutes.
  • Drain potatoes and return to the pot. Mash with butter, milk, salt, and pepper until smooth.
  • Preheat oven to 375°F (190°C). Grease a muffin tin.
  • Mix half of the cheddar cheese and Monterey Jack cheese into the mashed potatoes.
  • Spoon mashed potatoes into the muffin tin cups.
  • Top each cup with the remaining cheese and a dollop of sour cream.
  • Bake for 20-25 minutes, or until golden brown and bubbly.

Notes

Serve immediately and enjoy! These are best when fresh.
