These cheesy potato puff bites are the perfect appetizer or snack! Crispy on the outside, soft and cheesy on the inside, and incredibly easy to make.

Instructions
Preparation Steps
Preheat oven to 400°F (200°C). Grease a baking sheet.
Peel and boil the potatoes until tender, about 15-20 minutes.
Drain the potatoes and mash them well.
Add cheddar cheese, mozzarella cheese, flour, salt, pepper, and melted butter. Mix until combined.
Stir in the chives, if using.
Roll the potato mixture into 1-inch balls and place them on the prepared baking sheet.
Bake for 20-25 minutes, or until golden brown and crispy.
Notes
Serve immediately and enjoy these cheesy bites! They are best when fresh.
