Chicken Asparagus Stir Fry

A quick and healthy chicken and asparagus stir fry, perfect for a weeknight meal!

  • 1.5 pounds boneless, skinless chicken breast cut into bite-sized pieces
  • 1 pound fresh asparagus trimmed and cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 0.5 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 0.5 teaspoon red pepper flakes optional
  • 2 cloves garlic minced
  • 1 inch fresh ginger grated

Preparation Steps

  • In a small bowl, whisk together soy sauce, honey, cornstarch, and red pepper flakes (if using). Set aside.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and no longer pink.

  • Add asparagus, garlic, and ginger to the skillet. Stir-fry for 2-3 minutes, until asparagus is tender-crisp and garlic and ginger are fragrant.

  • Pour the prepared sauce over the chicken and vegetables. Stir well to coat and cook for another 1-2 minutes, until the sauce has thickened.

  • Serve hot, optionally over rice or noodles.

Notes

This stir fry is easily adaptable. Feel free to add other vegetables like bell peppers or broccoli.
