  • 3 lbs Chicken pieces (bone-in, skin-on)
  • 1 tablespoon Olive oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Bell peppers (mix of colors), chopped
  • 28 oz Crushed tomatoes
  • 1 cup Chicken broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Season chicken pieces with salt and pepper.
  • Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken until golden brown on all sides. Remove chicken and set aside.
  • Add onion and bell peppers to the skillet and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in crushed tomatoes and chicken broth. Stir in oregano and basil.
  • Return chicken to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until chicken is cooked through and tender.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Serve with crusty bread for dipping into the delicious sauce.
