Chicken cacciatore is a classic Italian-American dish featuring chicken braised with tomatoes, onions, bell peppers, and herbs. This recipe provides a delicious and easy-to-follow version.
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken until golden brown on all sides. Remove chicken and set aside.
Add onion and bell peppers to the skillet and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more.
Pour in crushed tomatoes and chicken broth. Stir in oregano and basil.
Return chicken to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until chicken is cooked through and tender.
Serve hot, garnished with fresh parsley if desired.
Notes
Serve with crusty bread for dipping into the delicious sauce.
