Preparation Steps
Heat olive oil in a large skillet or pot over medium-high heat. Add chicken and cook until browned on all sides.
Add onion and cook until softened, about 5 minutes. Add garlic and ginger; cook for 1 minute more.
Stir in curry powder, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
Add diced tomatoes and chicken broth. Bring to a simmer, then reduce heat and cover. Cook for 15 minutes, or until chicken is cooked through.
Stir in coconut milk and cilantro. Simmer for 5 minutes more.
Serve hot over rice.
Notes
Serve with naan bread for a complete meal.
