Chicken Curry

A flavorful and easy chicken curry recipe, perfect for a weeknight meal.

  • 1.5 lbs Chicken breast, cut into 1-inch cubes
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Grated fresh ginger
  • 1 tablespoon Curry powder
  • 0.5 teaspoon Turmeric
  • 0.25 teaspoon Cayenne pepper (optional)
  • 14.5 oz Canned diced tomatoes
  • 0.5 cup Chicken broth
  • 0.5 cup Coconut milk
  • 0.25 cup Chopped fresh cilantro
  • 1 cup Cooked rice

Preparation Steps

  • Heat olive oil in a large skillet or pot over medium-high heat. Add chicken and cook until browned on all sides.
  • Add onion and cook until softened, about 5 minutes. Add garlic and ginger; cook for 1 minute more.
  • Stir in curry powder, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  • Add diced tomatoes and chicken broth. Bring to a simmer, then reduce heat and cover. Cook for 15 minutes, or until chicken is cooked through.
  • Stir in coconut milk and cilantro. Simmer for 5 minutes more.
  • Serve hot over rice.

Notes

Serve with naan bread for a complete meal.
