Chicken Enchilada Casserole

A delicious and easy chicken enchilada casserole recipe perfect for weeknight dinners. Layers of tortillas, shredded chicken, and a creamy sauce are baked to perfection.

  • 1.5 lb Cooked chicken, shredded
  • 12 Corn tortillas
  • 2 cups Shredded cheddar cheese
  • 1 can Enchilada sauce (28 oz)
  • 1 cup Sour cream
  • 0.25 cup Chopped green onions for garnish

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • Spread a thin layer of enchilada sauce in the bottom of the dish.
  • Dip each tortilla in enchilada sauce and layer 4-5 tortillas in the dish.
  • Top with half of the chicken, half of the sour cream, and 1/3 of the cheese. Repeat layers.
  • Top with remaining tortillas, enchilada sauce, and cheese.
  • Bake for 25-30 minutes, or until bubbly and cheese is melted. Garnish with green onions.

Notes

Serve hot with your favorite toppings like sour cream, guacamole, or salsa.
