Chicken Kabobs

Delicious and flavorful chicken kabobs marinated in a zesty Greek-inspired marinade. Perfect for grilling!

Ingredients
  

Marinade

  • 0.25 cup Olive oil
  • 0.25 cup Lemon juice
  • 2 tablespoons Dried oregano
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Main Ingredients

  • 1.5 pounds Chicken breasts, cut into 1-inch cubes
  • 1 large Red bell pepper, chopped
  • 1 large Yellow bell pepper, chopped
  • 1 medium Red onion, cut into chunks

Instructions
 

Preparation

  • In a bowl, whisk together the marinade ingredients.
  • Place chicken cubes in a large bowl or zip-top bag. Pour marinade over chicken and toss to coat. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  • Preheat grill to medium-high heat. Thread chicken, bell peppers, and red onion onto skewers.
  • Grill kabobs for 12-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.

Notes

Serve with a side of tzatziki sauce and warm pita bread for a complete meal!
