Instructions
Preparation Steps
Cut the chicken breasts into bite-sized pieces.
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.
Add the onion and garlic to the pot and cook until softened, about 3-5 minutes.
Stir in the laksa paste and cook for 1 minute.
Pour in the chicken broth and coconut milk. Bring to a simmer.
Add the fish sauce. Season with salt and pepper to taste.
Add the rice noodles and cook according to package directions.
Serve hot, garnished with bean sprouts, cilantro, and a lime wedge.
