Chicken Laksa

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp vegetable oil
  • 1 onion yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp laksa paste
  • 4 cups chicken broth
  • 1 can coconut milk (13.5 oz)
  • 0.25 cup fish sauce
  • 0.5 cup rice noodles
  • 0.5 cup bean sprouts
  • 0.25 cup fresh cilantro, chopped
  • 1 lime lime wedges, for serving

Preparation Steps

  • Cut the chicken breasts into bite-sized pieces.
  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.
  • Add the onion and garlic to the pot and cook until softened, about 3-5 minutes.
  • Stir in the laksa paste and cook for 1 minute.
  • Pour in the chicken broth and coconut milk. Bring to a simmer.
  • Add the fish sauce. Season with salt and pepper to taste.
  • Add the rice noodles and cook according to package directions.
  • Serve hot, garnished with bean sprouts, cilantro, and a lime wedge.
