Chicken Noodle Salad

A refreshing and flavorful chicken noodle salad perfect for a light lunch or dinner. This recipe combines tender chicken, vibrant vegetables, and a creamy dressing for a satisfying meal.

  • 1 lb Chicken breast
  • 8 oz Egg noodles
  • 1 cup Carrots, sliced
  • 1 cup Celery, chopped
  • 0.5 cup Red onion, thinly sliced
  • 0.75 cup Mayonnaise
  • 0.25 cup Plain Greek yogurt
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Preparation Steps

  • Cook chicken breast until fully cooked. Let cool and shred or dice.
  • Cook egg noodles according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine cooked chicken, noodles, carrots, celery, and red onion.
  • In a separate bowl, whisk together mayonnaise, Greek yogurt, lemon juice, salt, and pepper.
  • Pour dressing over the chicken and noodle mixture and toss to combine.
  • Refrigerate for at least 30 minutes before serving.

Notes

Serve chilled. Garnish with fresh parsley or green onions if desired.
