Chicken piccata meatballs

These Chicken Piccata Meatballs combine the classic flavors of chicken piccata with the fun of meatballs! Tender chicken meatballs are simmered in a bright lemon-caper sauce for an easy and delicious meal.

  • 1.5 pounds ground chicken
  • 0.5 cup panko breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 0.25 cup capers, drained
  • 0.5 cup chicken broth
  • 0.25 cup lemon juice
  • 0.25 cup fresh parsley, chopped

Preparation Steps

  • In a large bowl, combine ground chicken, panko breadcrumbs, Parmesan cheese, and egg. Season with salt and pepper. Mix until just combined. Do not overmix.
  • Roll the mixture into 1-inch meatballs.
  • Heat olive oil in a large skillet over medium-high heat. Add meatballs and cook, turning occasionally, until browned on all sides, about 5-7 minutes. Remove meatballs from the skillet and set aside.
  • Melt butter in the same skillet. Add capers and cook for 1 minute. Pour in chicken broth and lemon juice. Bring to a simmer.
  • Return meatballs to the skillet. Simmer for 10-15 minutes, or until the meatballs are cooked through and the sauce has thickened slightly.
  • Stir in parsley. Serve immediately.

Notes

Serve over pasta, rice, or with a side of vegetables.
