Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
In a large bowl, combine rice, cream of mushroom soup, chicken broth, mixed vegetables, salt, and pepper.
Stir in the cubed chicken.
Pour the mixture into a greased 9x13 inch baking dish.
Cover with foil and bake for 45 minutes.
Remove foil and bake for an additional 15 minutes, or until chicken is cooked through and rice is tender.
Let stand for 10 minutes before serving.
Notes
Serve hot with a side salad. For a richer flavor, add shredded cheddar cheese during the last 5 minutes of baking.
