Chicken Rice Casserole Recipe

A comforting and easy-to-make chicken and rice casserole, perfect for a weeknight dinner.

  • 1.5 lb Boneless, skinless chicken breasts Cut into 1-inch cubes
  • 1 cup Long-grain rice Uncooked
  • 1 can Cream of mushroom soup 10.75 oz
  • 1 can Chicken broth 10.75 oz
  • 1 cup Mixed vegetables Frozen
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine rice, cream of mushroom soup, chicken broth, mixed vegetables, salt, and pepper.
  • Stir in the cubed chicken.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Cover with foil and bake for 45 minutes.
  • Remove foil and bake for an additional 15 minutes, or until chicken is cooked through and rice is tender.
  • Let stand for 10 minutes before serving.

Notes

Serve hot with a side salad. For a richer flavor, add shredded cheddar cheese during the last 5 minutes of baking.
