  • 1.5 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion medium, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 pound rigatoni pasta
  • 0.5 cup fresh basil, chopped
  • 0.25 teaspoon red pepper flakes optional
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
  • Cut chicken into bite-sized pieces. Season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and red pepper flakes (if using) and cook for 1 minute more.
  • Stir in crushed tomatoes and bring to a simmer. Reduce heat and simmer for 10 minutes.
  • Stir in heavy cream and Parmesan cheese. Add cooked chicken and cooked pasta. Toss to combine.
  • Add reserved pasta water if needed to adjust the sauce consistency.
  • Stir in fresh basil. Season with salt and pepper to taste. Serve immediately.
