Chicken Scallopini

A quick and easy recipe for delicious chicken scallopini. Thinly sliced chicken breasts are dredged in flour, sautéed, and served with a flavorful lemon-butter sauce.

  • 1 pound Chicken breasts
  • 1 cup All-purpose flour
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 4 tablespoons Butter
  • 0.25 cup Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Pound chicken breasts to 1/4 inch thickness. Dredge in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
  • Melt butter in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side, until golden brown and cooked through.
  • Remove chicken from skillet and keep warm. Add lemon juice to the skillet and scrape up any browned bits. Season with salt and pepper.
  • Serve chicken immediately, drizzled with lemon-butter sauce.
