Preparation Steps
Pound chicken breasts to 1/4 inch thickness. Dredge in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
Melt butter in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side, until golden brown and cooked through.
Remove chicken from skillet and keep warm. Add lemon juice to the skillet and scrape up any browned bits. Season with salt and pepper.
Serve chicken immediately, drizzled with lemon-butter sauce.
