Chicken Taco Salad

This Layered Chicken Taco Salad is a colorful and flavorful dish perfect for lunch or dinner, with layers of seasoned chicken, fresh vegetables, cheese, and crunchy tortilla strips.

Ingredients
  

Main Ingredients

  • 3 cups Romaine lettuce chopped
  • 3 cups Fresh spinach
  • 2 cups Cooked chicken shredded or diced
  • 2 cans Mexicorn whole kernel corn with red and green peppers, drained (11 ounce each)
  • 3 Roma tomatoes diced
  • 1.5 cups Colby-Jack cheese shredded
  • 2 Green onions chopped (tops too)
  • 1.5 cups Southwest tortilla strips or chips
  • 2 Tablespoons Fresh cilantro chopped

Dressing Ingredients

  • 0.75 cup Salsa
  • 0.75 cup French dressing

Instructions
 

Preparation Steps

  • In a large glass bowl, layer half of the lettuce and spinach. Top with tomatoes, corn, chicken and remaining lettuce and spinach. Top with cheese.
  • In a small bowl, mix together the salsa with the French dressing. Pour over the top of the cheese. Garnish with cilantro, green onions, and tortilla strips.
