Instructions
Preparation Steps
In a medium bowl, mash half of the chickpeas with a fork. Leave the other half whole.
Add the red onion, parsley, lemon juice, olive oil, cumin, salt, and pepper to the bowl. Mix well to combine.
Stir in the remaining whole chickpeas.
Taste and adjust seasonings as needed.
Serve chilled or at room temperature.
Notes
This salad is even better the next day, allowing the flavors to meld together. Feel free to add other vegetables like chopped celery or bell peppers.
