Chickpea Salad Recipe

A delicious and healthy chickpea salad recipe, perfect for a light lunch or a side dish. Easy to make and packed with flavor!

  • 1.5 cups cooked chickpeas
  • 0.5 cup finely chopped red onion
  • 0.25 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a medium bowl, mash half of the chickpeas with a fork. Leave the other half whole.
  • Add the red onion, parsley, lemon juice, olive oil, cumin, salt, and pepper to the bowl. Mix well to combine.
  • Stir in the remaining whole chickpeas.
  • Taste and adjust seasonings as needed.
  • Serve chilled or at room temperature.

Notes

This salad is even better the next day, allowing the flavors to meld together. Feel free to add other vegetables like chopped celery or bell peppers.
