Preparation Steps
Rehydrate the dried mushrooms in hot water for 30 minutes. Drain and slice.
In a large pot, combine vegetable broth, mushrooms, bamboo shoots, and tofu. Bring to a simmer.
Stir in soy sauce, rice vinegar, white pepper, and ground ginger.
In a small bowl, whisk together cornstarch and water. Add to the soup and stir until thickened.
Stir in sesame oil and chili garlic sauce. Taste and adjust seasonings.
Serve hot, garnished with chopped scallions.
Notes
Adjust the amount of chili garlic sauce according to your preference for spiciness. For a richer flavor, use homemade vegetable broth.
