  • 8 oz Dried shiitake mushrooms Rehydrated
  • 4 cups Vegetable broth
  • 0.5 cup Bamboo shoots Sliced
  • 0.5 cup Tofu Firm, cubed
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon White pepper
  • 1 teaspoon Ground ginger
  • 0.25 cup Cornstarch
  • 0.25 cup Water
  • 2 tablespoons Sesame oil
  • 2 tablespoons Chili garlic sauce Or to taste
  • 0.25 cup Scallions Chopped, for garnish

Preparation Steps

  • Rehydrate the dried mushrooms in hot water for 30 minutes. Drain and slice.
  • In a large pot, combine vegetable broth, mushrooms, bamboo shoots, and tofu. Bring to a simmer.
  • Stir in soy sauce, rice vinegar, white pepper, and ground ginger.
  • In a small bowl, whisk together cornstarch and water. Add to the soup and stir until thickened.
  • Stir in sesame oil and chili garlic sauce. Taste and adjust seasonings.
  • Serve hot, garnished with chopped scallions.

Notes

Adjust the amount of chili garlic sauce according to your preference for spiciness. For a richer flavor, use homemade vegetable broth.
