chocolate mint brownies

Rich fudgy brownies topped with a soft, creamy chocolate mint layer and finished with a smooth chocolate ganache. A perfect balance of chocolate and refreshing mint!

  • 1 cup unsalted butter
  • 0.5 cup semi-sweet chocolate morsels
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 0.75 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon baking powder
  • 0.5 cup unsalted butter softened for filling
  • 2 cups powdered sugar for filling
  • 1 teaspoon peppermint extract for filling
  • 1 drop green gel food coloring for filling
  • 2 tablespoons milk for filling
  • 0.5 cup milk chocolate chips for ganache
  • 0.5 cup heavy whipping cream for ganache

Preparation Steps

  • Preheat oven to 350°F. Line a 9-inch baking dish with parchment paper. Set aside.
  • In a medium saucepan, melt butter over medium heat. Remove from heat and add chocolate chips and sugar. Stir until chocolate is completely melted.
  • Add eggs one at a time, stirring completely after each addition. Stir in vanilla extract.
  • Add cocoa powder, flour, salt, and baking powder. Stir just until combined without over mixing.
  • Pour batter into prepared baking dish and bake for about 35 minutes. Remove from oven and allow to cool completely before adding the filling.
  • To make the mint filling, beat softened butter with powdered sugar, peppermint extract, green gel food coloring, and milk until fluffy and combined, about 3-4 minutes.
  • Spread the filling evenly over the cooled brownies. Refrigerate while preparing the ganache.
  • For the ganache, heat heavy cream in a small saucepan until warm but not boiling. Remove from heat and whisk in milk chocolate chips until smooth.
  • Pour the ganache immediately over the mint layer and spread evenly with an offset spatula. Return to the refrigerator for one hour to set.
  • Slice into 16 brownies and serve.

These brownies are best stored refrigerated and served at room temperature for optimal texture. Perfect for holiday parties or a cozy indulgence.
