Rich fudgy brownies topped with a soft, creamy chocolate mint layer and finished with a smooth chocolate ganache. A perfect balance of chocolate and refreshing mint!
Preheat oven to 350°F. Line a 9-inch baking dish with parchment paper. Set aside.
In a medium saucepan, melt butter over medium heat. Remove from heat and add chocolate chips and sugar. Stir until chocolate is completely melted.
Add eggs one at a time, stirring completely after each addition. Stir in vanilla extract.
Add cocoa powder, flour, salt, and baking powder. Stir just until combined without over mixing.
Pour batter into prepared baking dish and bake for about 35 minutes. Remove from oven and allow to cool completely before adding the filling.
To make the mint filling, beat softened butter with powdered sugar, peppermint extract, green gel food coloring, and milk until fluffy and combined, about 3-4 minutes.
Spread the filling evenly over the cooled brownies. Refrigerate while preparing the ganache.
For the ganache, heat heavy cream in a small saucepan until warm but not boiling. Remove from heat and whisk in milk chocolate chips until smooth.
Pour the ganache immediately over the mint layer and spread evenly with an offset spatula. Return to the refrigerator for one hour to set.
Slice into 16 brownies and serve.
