  • 1.5 cups semi-sweet chocolate chips You can also use dark chocolate chips for a richer flavor.
  • 0.5 cup heavy cream
  • 0.3 cup raspberry preserves Make sure to use seedless.
  • 0.25 cup cocoa powder For coating the truffles.

Preparation Steps

  • Melt the chocolate chips and heavy cream in a double boiler, stirring until smooth.
  • Remove from heat and stir in the raspberry preserves.
  • Chill the mixture in the refrigerator for about an hour or until firm.
  • Scoop small spoonfuls of the truffle mixture and shape into balls.
  • Roll each truffle in cocoa powder to coat.

Notes

For best results, serve the truffles slightly chilled. You can store them in an airtight container in the refrigerator for up to a week.
