Christmas cake

A delicious and festive Christmas cake recipe.

  • 1.5 cup All-purpose flour
  • 1 cup Butter unsalted
  • 1 cup Sugar granulated
  • 6 Eggs
  • 1 cup Mixed dried fruits
  • 0.5 cup Chopped nuts walnuts or pecans
  • 0.25 cup Brandy
  • 1 tsp Baking powder
  • 1 tsp Mixed spice

Preparation Steps

  • Preheat oven to 300°F (150°C). Grease and flour a 9-inch round cake pan.
  • In a bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time.
  • Stir in the flour, dried fruits, nuts, brandy, baking powder, and mixed spice.
  • Pour the batter into the prepared pan and bake for 2.5 - 3 hours, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
