This cilantro lime chicken is a zesty and flavorful dish perfect for a quick weeknight meal. Juicy chicken breasts are marinated in fresh lime juice, garlic, and plenty of chopped cilantro for a bright and refreshing taste.
In a bowl, whisk together lime juice, olive oil, minced garlic, chopped cilantro, ground cumin, salt, and black pepper to create the marinade.
Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, up to 2 hours.
Preheat grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
Remove chicken from marinade and grill for 6 minutes on each side or until internal temperature reaches 165°F (74°C) and juices run clear.
Transfer chicken to a plate and let rest for 5 minutes. Garnish with additional chopped cilantro and lime wedges if desired before serving.
