Cinnamon Banana Bread Muffins

Delicious and moist cinnamon banana bread muffins, perfect for breakfast or a snack. Easy to make and full of flavor!

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cups sugar
  • 1 teaspoon ground cinnamon
  • 3 ripe bananas, mashed
  • 0.5 cup vegetable oil
  • 2 large eggs

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, baking soda, salt, and cinnamon.
  • In a separate bowl, mash bananas. Add sugar, oil, and eggs; mix well.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Fill muffin cups about ¾ full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

These muffins are best served fresh, but can be stored in an airtight container at room temperature for up to 3 days.
