These Cinnamon Sugar Pretzel Bites are a sweet and salty snack that's perfect for parties or a cozy night in. Soft pretzel dough is cut into bite-sized pieces, baked to golden perfection, and then tossed in a generous coating of cinnamon sugar.
In a large bowl, dissolve sugar and yeast in warm water. Let stand for 5 minutes until foamy.
Add flour and salt to the yeast mixture and mix until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large pot, bring 8 cups of water to a boil. Add baking soda.
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 1 inch thick) and cut into 1-inch pieces.
Drop the pretzel bites into the boiling water in batches and cook for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
Bake for 12-15 minutes, or until golden brown.
While the pretzel bites are baking, melt butter in a small bowl. In another bowl, combine granulated sugar and cinnamon.
While still warm, brush the pretzel bites with melted butter and then toss in the cinnamon sugar mixture until well coated.
