Coconut Cream Donuts

These delicious coconut cream donuts are a perfect treat! Soft, fluffy donuts filled with a creamy coconut filling and topped with a sweet glaze. A delightful combination of textures and flavors.

Ingredients
  

Donut Ingredients

  • 2.5 cups All-purpose flour
  • 0.75 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Coconut milk
  • 1 large Egg
  • 2 tablespoons Melted butter

Coconut Cream Filling Ingredients

  • 1 cup Heavy cream
  • 0.5 cup Shredded coconut
  • 0.25 cup Powdered sugar

Glaze Ingredients

  • 1.5 cups Powdered sugar
  • 0.25 cup Coconut milk
  • 0.5 teaspoon Vanilla extract

Instructions
 

Make the Donuts

  • Preheat oven to 375°F (190°C). Grease and flour a donut pan.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together coconut milk, egg, and melted butter.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Fill donut pan with batter and bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  • Let donuts cool in pan for a few minutes before transferring to a wire rack to cool completely.

Make the Coconut Cream Filling

  • In a medium bowl, whip heavy cream until stiff peaks form.
  • Gently fold in shredded coconut and powdered sugar.

Make the Glaze and Assemble

  • In a small bowl, whisk together powdered sugar, coconut milk, and vanilla extract until smooth.
  • Once donuts are cooled, fill with coconut cream filling and dip in glaze.
  • Let glaze set before serving.
