Coconut Ice

This easy coconut ice recipe is a classic no-bake treat, perfect for satisfying your sweet tooth. It's simple to make, requiring just a few ingredients, and it's always a crowd-pleaser!

  • 14 oz Sweetened Condensed Milk
  • 14 oz Desiccated Coconut
  • 0.5 tsp Vanilla Extract
  • 0.25 cup Pink Food Coloring

Preparation Steps

  • In a large bowl, combine the sweetened condensed milk, 10 ounces of the desiccated coconut, and vanilla extract. Mix well until everything is combined.
  • Divide the mixture in half. In one half, mix in the pink food coloring. In the other half, leave it white.
  • Line a square baking dish with parchment paper. Press the white mixture into the bottom of the dish.
  • Sprinkle the remaining 4 ounces of desiccated coconut over the white layer.
  • Top with the pink mixture, pressing it down evenly.
  • Refrigerate for at least 2 hours, or until firm.
  • Cut into squares and serve.

Notes

For a fun twist, you can add a layer of melted chocolate on top! Store in an airtight container in the refrigerator.
