Preparation Steps
Preheat your oven to 350°F (175°C).
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the egg and mix until well combined.
Gradually add in the flour and mix until the dough forms.
Roll the dough into 1-inch balls, then coat each ball in shredded coconut.
Place the balls on a baking sheet and make an indentation in each with your thumb.
Fill each indentation with a small amount of jam.
Bake for 12-15 minutes, or until the edges are golden.
