Coconut Thumbprint Cookies

  • 1.5 cups all-purpose flour
  • 0.75 cup unsalted butter at room temperature
  • 0.5 cup granulated sugar
  • 1 large egg
  • 1 cup shredded coconut
  • 0.5 cup jam your choice of flavor

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the egg and mix until well combined.
  • Gradually add in the flour and mix until the dough forms.
  • Roll the dough into 1-inch balls, then coat each ball in shredded coconut.
  • Place the balls on a baking sheet and make an indentation in each with your thumb.
  • Fill each indentation with a small amount of jam.
  • Bake for 12-15 minutes, or until the edges are golden.
