Bright and refreshing corn salad with fresh vegetables, feta, and a zesty lemon-olive dressing.

Ingredients

  • 4 ears fresh corn shucked, yields about 2 cups kernels
  • 1 cup grape tomatoes halved
  • 1 cup English cucumber diced
  • 0.333 cup red onion diced
  • 0.666 cup feta cheese crumbled
  • 3 Tbsp parsley finely chopped
  • 2 Tbsp fresh basil finely chopped
  • 0.25 cup olive oil
  • 1.5 Tbsp red wine vinegar
  • 1 Tbsp lemon juice
  • 0.5 Tbsp honey
  • 0.5 tsp garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • Whisk together olive oil, red wine vinegar, lemon juice, honey, garlic, salt and pepper to make the dressing.
  • Prepare the salad by mixing corn kernels with tomatoes, cucumber, red onion, feta, parsley and basil. Drizzle dressing over and toss to coat.

Notes

Best served fresh. This colorful salad is great as a side for grilled chicken or seafood, and it holds well for a picnic.
